meet Our Master Distiller

Iliana Partida

Iliana Partida knows tequila. The daughter of third-generation agave farmer and tequila producer David Partida, this fourth-generation Master Distiller has been surrounded by Blue Weber agave her entire life, and it shows. This is what we mean when we talk about being authentic. Iliana is an absolute legend in the tequila scene, and we couldn’t be more proud to have her as our Master Distiller. Her knowledge of traditional methods and her ability to break the mold make Twerk Tequila the brand it is.

Our Special Process

Smooth, Flavorful, Perfection

Harvesting the Agave

After years of growth, specially trained workers called "jimadors" meticulously remove the leaves of the mature blue agave plant, revealing the piña (heart) – the treasure trove for tequila.

Cooking the Piña

The piñas are then cooked. Traditional methods involve slow roasting in brick ovens for days, while modern producers might use autoclaves. This process breaks down the starches in the piña, converting them into fermentable sugars.

Extracting the Juice

Once cooked, the softened piñas are crushed to release their sweet nectar, known as "aguamiel".

Fermentation

The aguamiel mingles with yeast, typically in wooden tanks. Over several days, the yeast munches on the sugars, transforming them into alcohol – the foundation of tequila.

Distillation

The fermented liquid goes through distillation, usually twice. This purifies the alcohol and concentrates it, resulting in a clear tequila with a higher alcohol content.

Aging

Tequila can be bottled right after distillation for a Blanco (silver) tequila. But for a more complex flavor profile, some tequilas are aged in barrels, like oak, which imparts rich colors and aromas.
